The COVID shutdown gave her the space to pause, reflect, and choose a different path. “I was a trucker for over 20 years and decided to pivot during the COVID years,” she says. Following her lifelong passion for food, Kimbily enrolled in college in her 40s to sharpen her culinary skills.
